Turnip

| Ingredients |
| 3 cups cooked mashed turnip |
| 3 tbsp. butter |
| 3 eggs, separated |
| salt and pepper to taste |
| 1 tbsp. light brown sugar |
| Method |
| Slice and cook turnip. Preheat oven to 400 F. Place turnip and butter in large bowl. Beat egg yolks; add to turnip. Season with salt and pepper. Beat egg whites until stiff, fold into turnip. Pour into greased souffle dish. Sprinkle with brown sugar. Bake for 12 minutes. |
