Strawberry-Spinach Salad |
| Salad Ingredients |
| 1 bunch of fresh spinach |
| strawberries |
| 1 head Boston lettuce |
| slivered almonds (optional) |
| Dressing Ingredients |
| 1/4 cup white sugar |
| juice of 1 lemon |
| 1 egg yolk |
| 6 tbsp. Vegetable oil |
| 1 tsp. poppy seeds (optional) |
| Method |
Wash and cut spinach, lettuce, and strawberries. Dry well. Layer in a large bowl (spinach,lettuce, strawberries). Continue layers until bowl is almost full. Leave room for tossing. |
To make the dressing, whisk the sugar, lemon juice, and egg yolk together. Whisk in the vegetable oil 1 tbsp. at a time. Add the poppy seeds if desired. Drizzle the dressing over the salad just prior to serving and toss. |
The almonds may be added to the layering process with the strawberries if desired. |
