Glass Cookies

Ingredients |
1 3/4 cups whole wheat flour |
1 cup all purpose flour |
1 tsp. pumpkin pie spice |
1/4 tsp. salt |
1/2 tsp. baking soda |
1/2 cup butter |
1 cup packed brown sugar |
1 egg |
1/2 tsp. vanilla |
1/2 cup sour cream |
3 ounces yellow or red clear hard candy, crushed |
foil covered baking sheet and electric mixer |
Method |
Combine flours, spice, baking soda, and salt. Place butter in a separate bowl and beat until softened. Add sugar and beat until fluffy. Add vanilla and egg and beat. Add flour mixture and sour cream alternately, beating well. Halve dough, cover, and chill 2 hours. |
On floured surface, roll half of the dough 1/8" thick. Use cookie cutters to cut out shapes up to 6-8". Cut out holes in shapes and fill with crushed candy. Bake 6-8 minutes at 350 F until edges are brown. Cool on sheet 10 minutes. Peel off foil and continue cooling. Store in airtight container. |
Makes about 10 large cookies. These look great as tree ornaments as well. |
