Squash

| Ingredients |
| 1 cup onion, finely chopped |
| 3/4 cup mayonnaise |
| 3 cups cooked Hubbard or Butternut squash |
| 1/4 cup all purpose flour |
| 1 tbsp. light brown sugar |
| 1 tsp. each baking powder and salt |
| 1/4 tsp. each nutmeg and black pepper |
| 3/4 cup breadcrumbs |
| 2 tbsp. melted butter |
| Method |
| Saute onion in small amount of mayonnaise until tender. Combine all ingredients except breadcrumbs and butter. Spoon into a greased 6 cup (1.5 litre) casserole dish. Combine breadcrumbs and butter; sprinkle over squash mixture. Bake at 375 F for 40 minutes until golden. Makes 6 servings. |
