Peach

| l6 oz can sliced peaches |
| 2 3 oz pkgs peach or apricot jello |
| 1/2 cup sugar |
| 2 cups boiling water |
| 1 tsp almond extract |
| 8 oz tub frozen, whipped topping, thawed (Cool Whip) |
| additional peach slices |
| Drain peaches, reserving 2/3 cup juice. Chop peaches into small pieces; set aside in bowl, dissolve sugar and gelatin in boiling water. Stir in reserved syrup. Chill until slightly thickened. Stir almond extract into whipped topping; gently fold into gelatin mixture. Fold in peaches. Pour into oiled 6 cup mold or bowl of your choice. Chill overnight for best results. Unmold and garnish with additional; fruit if desired. |
