Tart Muffins
|
1 1/2 cups raisins |
3/4 cups sugar |
1/2 cup butter cut into chunks |
2 eggs, beaten |
1/2 cup milk |
1 tsp vanilla |
1 1/2 cups all purpose flour |
2 tsp baking powder |
1 tsp baking soda |
pinch salt |
1/2 cup chopped walnuts |
1/4 cup corn or maple syrup |
Preheat oven to 375 F. Place raisins, sugar, butter, milk, eggs, and vanilla in large heavy bottomed saucepan. Cook over medium heat, stirring frequently, until mixture is hot, slightly thickened and just starting to bubble. Cool slightly in refrigerator. Stir flour, baking powder, baking soda and salt in large mixing bowl. Make a well in centre and pour in warm raisin mixture, stirring until just combined. Stir in nuts. Spoon into muffin cups. Bake for 15 minutes. Remove from oven. Pour 1 tsp syrup over top of each muffin. Makes 12 muffins. Store in a sealed bag in refrigerator. |
